Here’s something quick and easy I threw together for Andrea’s lunch today.
* handful of rolled oats
* handful of red spinach leaves, finely chopped
* 1 egg
* tiny pinch of salt
Pour hot water over the oats in a small saucepan. Bring it to a boil for about 5 minutes. Toss in the spinach and the egg, then stir continuously while cooking for another 5 minutes or so. You don’t want the spinach to lose its green. Add the salt, and serve hot.
Andrea only has her two front incisors so I had to make sure the oats were cooked long enough so they weren’t too chewy.
